Improving the viability of Lactobacillus plantarum VAL6using environmental-stress adaptation

To demonstrate the adaptation of lactic acid bacteria to environmental stresses can improve cell viability during freeze-drying, Lactobacillus plantarum VAL6 strain was cultured under different stress conditions, including temperature, pH, and increase in CO2 concentration. The results densitometry analysis showed that able survive harsh conditions such as at pH 2.5, temperature 47oC, anaerobic created by CO2. In particular, intensification culture could stimulate an density L. VAL6, reaching 9.4 compared 9 LogCFU/ml normal conditions. After cells were adapted 3.5, highest survival rate after freeze-drying 28% (2,500 times higher than control). potential use starter strains for food applications.
